We all know that our holiday plans are looking a little different this year— but that doesn’t mean that we aren’t celebrating! Whether you’re staying at home with family, traveling to see relatives or spending this time alone, this dish is sure to make your holiday season bright and merry!
Here’s what you’re going to need:
- 1 (16 ounce) package frozen corn kernels, thawed
- 2 (2.25 ounce) cans sliced ripe olives, drained
- 1 red bell pepper, chopped
- 1 small onion, chopped
- 5 cloves garlic, minced
- ⅓ cup olive oil
- ¼ cup lemon juice
- 3 tablespoons cider vinegar
- 1 teaspoon dried oregano
- ½ teaspoon salt & ½ teaspoon ground black pepper
- 4 avocados – peeled, pitted and diced
Directions:
In a large bowl, mix your corn, olives, red bell pepper and onion.
Next, grab a smaller both and throw in your garlic, olive oil, lemon juice, cider vinegar, oregano, salt and pepper. Pour this into your corn mixture and make sure everything is evenly coated.
Cover everything up and chill it in the refrigerator for 8 hours (or overnight!).
Finally, stir in your avocados and violla! A YENSA-approved superfood dish that you and your loved ones are sure to enjoy.
