Happy Friday the 13th! Thinking of the perfect way to celebrate the full moon and new season? We’ve put together a recipe that combines a classic favorite with the pumpkin spice craze that everyone will be raving about for the next few months. Gather your friends, watch your favorite scary movies, and get ready for a treat because we’re sharing our favorite recipe for pumpkin chocolate-chip cookies.
What you’ll need…
1 cup pumpkin (fresh or canned)
½ cup vegetable oil
1 egg
1 cup white sugar
1 tbsp vanilla extract
2 cups flour
1 tsp cinnamon
2 tsp baking powder
½ tsp baking soda
½ pumpkin spice
½ tsp salt
1 tsp milk
2 cups chocolate chips
Directions...
First, mix together the pumpkin, vegetable oil, sugar, vanilla, and egg together in a bowl thoroughly until smooth. This will be the wet mixture.
Next, mix flour, baking powder, cinnamon and salt together in a separate bowl.
Combine baking soda with milk and add to the wet mixture.
Fold dry ingredients into wet mixture little by little, until all ingredients are spread evenly.
Finally, fold in chocolate chips to finish your cookie dough off.
Preheat oven to 350º and line a cookie sheet with parchment paper.
Scoop cookie dough into balls no bigger than three tablespoons each and spread them out on the cookie sheet, at least 2 inches away from each other.
Bake cookies for 10-12 minutes, or until they pass the toothpick test.
Enjoy!
