It’s that time of the year again! Valentine’s Day.  The day to show your appreciation and love to all of your loved ones.  So whether you are celebrating with your friends, significant other or your cat - here are 8 easy recipes using RED superfoods.  The perfect way to show your love and affection!

 

Avocado Toast With Strawberries

What better way to start off your day that with this superfood-packed, easy breakfast?  Make your favorite toast, slice a half of an avocado, add your sliced strawberries and your favorite seasonings - you’re done!

 

Beet Fries

A healthy twist on french fries - beet fries are an easy way to satisfy your craving! Cut your beets into thin slices and bake them in the oven at 425 degrees for about 25 minutes or until crispy.  Then, season with sea salt and ground pepper, and you’re done!

 

Easy Cranberry Smoothie

Blend ½ cup of almond milk, ½ of a frozen banana, ⅓ cup of frozen cranberries, and a tablespoon of almond butter! Yum - a great morning or afternoon snack!

 

Festive Red Salad

This is a quick and simple lunch that requires almost no effort! Red cabbage, red onion, half of an apple, and beetroot.  Mix it all together and top with a sweet vinaigrette of your choice!

 

Pomegranate and Chia Seed Yogurt Parfait

Another simple snack.  Mix together pomegranate juice and chia seeds. Refrigerate that mixture overnight. Then, layer the mixture with yogurt and top with pomegranate seeds and walnuts.

 

Grapefruit, Kale, and Avocado Salad

Another simple salad you can eat for lunch or use as an amazing, healthy dinner side dish.  Combine these three ingredients as well as a tablespoon of olive oil. BONUS TIP:

Toss some grapefruit peels into your glass of water with a splash of grapefruit juice to add a nice citrus taste and to eliminate waste!

 

Chocolate Raspberry Oatmeal

Stir your oats with some almost milk and a pinch or two of cocoa powder! Top with as many fresh raspberries as you like.  If you have a sweet tooth, you can even drizzle some melted dark chocolate on the top.

 

Dark Chocolate Covered Strawberries

A healthy twist on a Valentine’s Day classic! Just melt down some dark chocolate, dip your strawberries in, and let it harden! If desired, before the chocolate hardens, you can top with crushed walnuts or pistachios for extra flavor!
